A Christmas Gammon story
Roast gammon has been on our table for centuries. With this recipe, your guests will try something different and unforgettable.
The gammon can be prepare the day before and just have to be finished on the day
Ingredients
1 gammon joint ( 1.5-2Kg)
Peel of 2 oranges
2 cinnamon stick
8 cloves
4 star anis
10 juniper berries
1 tsp cracked black pepper
2 bay leaves
Method
Add all ingredients in a large pot cover with water, bring to the boil then simmer for 2’1/2 hours.
Take the gammon out and chill it for the following day.
On the day, remove the fat from your gammon and rub it with dark treacle.
Preheat your fan oven to 160 degree Celsius ( gas mark 3)
Baked your gammon for between 90 to 120 minutes.
Carved and enjoy.
